Ingredients

3 None oranges
3 tbsp butter
1/3 cup sugar
8 oz strawberries, halved
8 None ready-made thin pancakes or crepes, warmed
None None Creme fraiche, to serve
Preparation

Thinly pare the peel from the oranges; cut into thin strips. Cut the pith off the oranges; divide the flesh into segments.
Melt the butter in a large skillet on low heat. Add the sugar and any juice from the oranges. Heat very gently for about 6-8 mins or until the sugar starts to dissolve. Add the strips of orange peel. Cook for a further 2 mins until just starting to caramelize. Remove some of the orange strips from the pan; reserve for garnish. Add the strawberries and orange segments to the pan. Stir. Remove from the heat.
Fill the warmed pancakes with the strawberry and orange mixture. Fold into quarters. Serve with creme fraiche. Garnish with the reserved orange strips.
