3/4 cup orange marmalade
1 None orange, quartered, sliced (leave skin on)
1/2 cup butter, softened
1/2 cup sugar
2 None large eggs
1 tsp vanilla extract
1/2 cup rice flour
1 cup ground almonds
1/4 cup shredded dried coconut
None None Heavy cream, to serve

Preheat oven to moderate, 350\u00b0F. Lightly grease four 1 1/2 cup ramekins or baking dishes and line with parchment paper. Place in a large baking dish. Spoon 2 tablespoons marmalade into each ramekin. Set aside.
Place orange in a food processor. Process until pureed. Add butter, sugar, eggs and vanilla. Pulse until well combined. Add rice flour, almond meal and coconut, pulsing until combined.
Spoon mixture evenly into ramekins. Fill pan with enough hot water to come halfway up sides of ramekins. Cover the pan with parchment paper and a tight-fitting foil lid.
Bake for 45-50 minutes until a skewer inserted in the center comes out clean. Remove ramekins from dish and allow to cool slightly before turning out onto serving dishes. Serve warm with cream.
