Savory Raspberry Granita - cooking recipe

Ingredients
    12 oz fresh or frozen raspberries
    3 tbsp raspberry vinegar
    2 tsp sugar
    None None Ground black pepper, to taste
    2.75 oz watercress
    None None Toasted ciabatta, to serve
Preparation
    Place the raspberries in a pan with the vinegar and sugar. Heat gently, stirring, until the raspberries are soft. Add black pepper to taste and pour into a freezer safe container. Allow to cool slightly, then place in freezer until just firm, about 2 1/2 hours. Stir the mixture with a fork to break up the ice crystals and return it to the freezer for about 1 hour.
    Remove the granita from the freezer 30 mins before serving. Place the watercress in 4 glasses. Break up the granita with a fork and spoon it on top of the watercress. Garnish with black pepper and serve with toasted ciabatta.
