Lemon Thyme Chicken With Blue Cheese Polenta - cooking recipe

Ingredients
    4 None chicken breast fillets
    2 tbsp fresh thyme leaves
    2 tbsp olive oil
    2 cloves garlic, minced
    2 1/2 tbsp butter
    1 tbsp lemon juice
    1/4 cup white wine
    9 oz polenta
    2.5 oz blue cheese, crumbled
    1/4 cup walnuts, toasted
    None None steamed broccoli and lemon wedges, to serve
Preparation
    In a shallow dish, combine chicken, thyme, 1 tbsp olive oil, lemon juice and garlic. Season to taste. Chill, covered, for 30 mins.
    Heat butter and remaining oil in a large frying pan over medium heat. Cook chicken for 5-6 mins per side, until browned all over and cooked through. Transfer to a plate, cover loosely with foil and let rest for 5 mins.
    Meanwhile, cook polenta according to package instructions. Add blue cheese and stir to combine. Season.
    Deglaze frying pan with wine. Simmer for 1 min, stirring.
    Arrange chicken and polenta on serving plates. Drizzle with pan sauce and sprinkle with walnuts. Serve with steamed broccoli and lemon wedges.
