Balsamic Chicken And Vegetables - cooking recipe

Ingredients
    2 tbsp balsamic vinegar
    1 tbsp brown sugar
    2 tsp vegetable or olive oil
    8 None chicken thighs
    6 None parsnips, peeled and quartered lengthwise
    4 None tomatoes, halved
    1/2 cup grated Cheddar cheese
    7 oz green beans, halved diagonally
    2 tbsp chopped basil, plus additional small leaves, to serve
Preparation
    Preheat the oven to 425\u00b0F. Combine vinegar and sugar in a small bowl; stir until sugar dissolves.
    Place chicken, parsnip and vinegar mixture in a roasting pan; toss to coat. Season. Bake for 20 mins. Add tomato, cut-side up, to dish. Sprinkle tomato with cheese. Bake for 10 mins more or until chicken and vegetables are golden and cooked through.
    Meanwhile, microwave beans on high (100%) for 2 mins or until just tender. Add basil and remaining oil; toss to combine. Season. Divide chicken, vegetables and beans among plates. Serve sprinkled with basil leaves.
