Bread And Butter Pickles - cooking recipe

Ingredients
    1 lb pickling cucumbers, unpeeled, thinly sliced lengthwise
    6 None shallots, thinly sliced
    1/4 cup kosher salt
    1 cup white vinegar
    1 cup sugar
    2 tsp mustard seeds
    1/2 tsp red pepper flakes
    1/4 tsp ground turmeric
    None None Bread, cold meat cuts, cheese, salad, to serve (optional)
Preparation
    Combine cucumber, shallots and salt in a medium stainless steel or glass bowl. Cover; let stand for 3 hours.
    Drain, then rinse cucumber mixture. Drain on paper towels.
    Place vinegar and remaining ingredients in a medium saucepan on high heat. Stir, without boiling, until sugar dissolves. Bring to a boil. Remove from heat.
    Spoon cucumber mixture into hot sterilized jars. Pour enough hot vinegar mixture into jars to cover cucumber mixture. Seal immediately. Label and date jars when cold. Once opened, store in the refrigerator.
