Frittata With New Potatoes, Green Beans And Carrots - cooking recipe

Ingredients
    2 1/4 lbs new potatoes
    5 oz green beans, cut in half
    5 oz baby carrots, peeled
    1 None onion, peeled and cut into thin strips
    4 tbsp sunflower oil
    6 None eggs
    3.5 oz Gouda cheese, grated
Preparation
    Cook the potatoes in boiling water for about 20 mins. Cook the beans in boiling salted water for 5 mins. After 3 mins add the carrots.
    Heat the oil in a large oven safe pan and fry the potatoes for 15 mins, turning as necessary. Add the onion, carrots and beans and fry them for about 10 mins.
    Preheat the oven to 400\u00b0F. Beat the eggs, season them to taste and stir in the cheese. Pour the egg mixture into the pan and cook over a low heat until eggs are mostly cooked through. Use a spatula or palette knife to keep it from sticking to the edge of the pan.
    Put the fritatta in the oven and bake it for 15 mins until golden brown.
