Red Pepper And Ginger Soup - cooking recipe

Ingredients
    1 tbsp olive oil
    2 None onions, chopped
    4 None red peppers, deseeded and chopped
    1 None garlic clove, crushed
    2 inch piece of fresh root ginger, chopped
    2 tsp ground paprika
    3 cups vegetable stock
    1/4 cup sour cream
    1 tbsp chopped parsley
    None None extra sour cream and parsley, to garnish
Preparation
    Heat the oil in a large pot. Add the onions and peppers and cook gently for 10 minutes, stirring frequently. Add the garlic, ginger and paprika and cook for 3 minutes.
    Stir in the stock and bring to a boil. Reduce heat and simmer for 15 minutes. Add the parsley and blend using a food processor or immersion blender.
    Return to the pot and stir in the sour cream. Reheat gently and season to taste. Ladle into bowls, swirl with a little extra sour cream and sprinkle with chopped parsley.
