Zucchini And Mint Couscous Salad - cooking recipe

Ingredients
    3 oz whole grain couscous
    2 None zucchini, thickly sliced
    4-5 sprigs fresh mint, leaves picked
    1 oz reduced-fat feta cheese, crumbled
    1 tbsp olive oil
    2 tsp lemon zest
    2 tsp lemon juice
Preparation
    Combine couscous and 1/2 cup boiling water in a medium bowl. Cover and let stand for 5 mins, occasionally fluffing with a fork.
    Meanwhile, preheat grill and oil grates. Grill zucchini for 2 mins per side, or until tender and browned. Transfer to a large serving bowl along with couscous and remaining ingredients. Season.
