Apple, Ricotta And Cinnamon Scones - cooking recipe

Ingredients
    2 1/4 cups self-rising flour, sifted
    1 1/2 tsp ground cinnamon
    2 None apples, peeled, grated
    1/4 cup brown sugar
    1/2 cup milk
    4 oz fresh ricotta cheese, plus extra to serve
    1 None medium egg, beaten
    1 1/2 tbsp butter, melted
    2 tbsp white sugar
    None None butter, to serve (optional)
Preparation
    Preheat oven to 425\u00b0F. Lightly grease and line a baking tray with parchment paper.
    Sift flour and 1/2 tsp cinnamon into a bowl. Stir in apples and sugar. Make a well in the center.
    Whisk together milk, ricotta and egg then pour into dry ingredients. Using a palette knife, mix quickly to form a soft dough.
    Turn dough out onto a lightly floured work surface and gently press out into a 1 inch-thick round. Cut out scones using a 2 inch floured cutter. Arrange close together on prepared tray.
    Lightly brush tops with butter. Combined white sugar and remaining cinnamon then sprinkle over scones.
    Bake for 12-15 mins, until golden brown. Transfer to a wire rack to cool slightly. Serve warm with extra ricotta or butter, if desired.
