Sirloin Steak With Fried Potatoes - cooking recipe

Ingredients
    5 tbsp oil
    1 1/4 lb sirloin steak
    1 cup vegetable stock + 2 tbsp
    1 tsp cornstarch
    1/2 lb frozen green beans
    1 1/2 lb potatoes, diced
    2/3 lb carrots, peeled and thinly sliced
    3 sprigs fresh rosemary, chopped
    1 cup sour cream
    3 None fresh chives, chopped
Preparation
    Preheat oven to 325\u00b0F. Heat 2 tbsp oil in a Dutch oven and sear beef, turning as necessary. Transfer to oven and roast for 15 mins (or until meat thermometer reads 135-140\u00b0F). Remove steak and set aside to rest. Deglaze pan with stock and add cornstarch. Bring to a boil and simmer for 1 min.
    Meanwhile, cook beans in boiling salted water for 4-5 min then drain. Heat remaining oil and saute potatoes for 3 mins. Add carrots and saute for 2-3 mins. Add beef sauce and rosemary, cover and simmer for 7 mins. Add beans and cook for another 7-8 mins.
    To serve, mix sour cream and chives. Slice beef and arrange on serving plates with potatoes and sour cream on side.
