Chicken And Pumpkin Tacos - cooking recipe

Ingredients
    1 tbsp vegetable or olive oil
    1 None medium yellow onion, finely chopped
    1 lb pumpkin, cut into 1 inch pieces
    1.5 oz sunflower seeds
    1 1/4 lbs ground chicken
    1 x 1.25 oz packet taco seasoning mix
    1/2 cup creamed corn
    12 None taco shells
    3 leaves iceberg lettuce, shredded
    1 None large avocado, finely chopped
    1/4 cup sour cream
Preparation
    Heat oil in a large non-stick frying pan over moderate heat.
    Add onion and pumpkin; cook, stirring, 5 mins. Add sunflower seeds; cook, stirring, another 2-3 mins, or until pumpkin is tender. Transfer to a large heatproof bowl.
    Add chicken to pan. Cook, stirring with a wooden spoon to break up lumps, 5 mins or until browned.
    Sprinkle seasoning mix over chicken and stir until combined. Stir in pumpkin and creamed corn; cook, stirring, 5-8 mins, or until heated.
    Meanwhile, preheat oven to 350\u00b0F.
    Place taco shells on baking sheets; bake 5-8 mins, or until toasted.
    Fill shells with lettuce and chicken mixture. Top with avocado and sour cream. Serve immediately.
