Pecan And Date Pudding With Caramel Sauce - cooking recipe

Ingredients
    1 cup self-rising flour
    1/2 tsp baking powder
    1/2 cup firmly packed brown sugar, plus additional, to serve
    2 tbsp butter, melted
    1/2 cup milk
    1/2 cup finely chopped seedless dates
    1/2 cup finely chopped pecans, plus additional, to serve
    None None FOR THE CARAMEL SAUCE
    1/2 cup firmly packed brown sugar
    3 tbsp butter, chopped
Preparation
    Preheat the oven to 350\u00b0F. Grease a 2-quart baking dish.
    Combine the flour, baking powder, brown sugar, butter, milk, dates and pecans in a large bowl. Spread in the prepared dish.
    For the caramel sauce, combine 1 3/4 cups boiling water, brown sugar and butter in a medium bowl and stir until the sugar has dissolved.
    Pour the caramel sauce slowly over the back of a spoon onto the mixture in the dish.
    Bake for about 45 mins or until the surface is firm. Let stand for 2 mins before serving. Sprinkle with additional pecans and brown sugar.
