Zia Flavia’S Pasta With Broccoli - cooking recipe
Ingredients

1 1/2 lb fresh broccoli, separated into florets (discard most of the stalk)
1 None bay leaf
3 tbsp extra-virgin olive oil
2 None medium onions, finely chopped
2 cloves garlic, minced
2 tbsp pine nuts
2 tbsp golden raisins
4 None anchovies in olive oil, mashed with a fork
2 None dried bird's eye chilies, crushed
1/4 tsp saffron strands, soaked in 2 tbsp warm water
14 oz spiral pasta such as fusilli, or orecchiette
3 oz grated Pecorino Romano cheese
Preparation

Bring a large pot of salted water to a boil. Add bay leaf and broccoli. Cook until broccoli is very tender. Drain, reserving 1 2/3 cups cooking water.
Heat oil in a large frying pan over low heat. Cook onions for 20 mins, until golden brown, stirring often. Add garlic and cook for 2 mins. Add pine nuts, raisins, anchovies and chilies.
Finely chop broccoli. Add to a medium saucepan along with reserved cooking water and saffron. Bring to a boil, mashing broccoli. Reduce heat and simmer, covered, for 30 mins, until thick. Season to taste.
Meanwhile, cook pasta in boiling salted water until al dente. Drain then add to broccoli sauce along with cheese. Serve immediately.
