Individual Tuna Noodle Casseroles - cooking recipe

Ingredients
    1 tsp vegetable or olive oil
    1 None onion, chopped
    2 cloves garlic, minced
    14 oz frozen mixed vegetables
    2 (13.5 oz) cans cherry tomatoes
    1 (15 oz) can tuna in spring water, drained, flaked
    12 oz pasta shells
    1/3 cup light mozzarella cheese, grated
    3 tbsp fresh flat-leaf parsley, finely chopped
Preparation
    Preheat oven to 400\u00b0F.
    Heat oil in a frying pan over medium heat. Sweat onion for 5 mins, until soft. Add garlic and cook for 30 seconds, or until fragrant. Add vegetables, tomatoes and tuna. Bring to a boil then remove from heat. Season.
    Meanwhile, cook pasta in boiling salted water for 8 mins or until almost tender. Drain. Toss with tuna mixture then distribute between 4 ramekins (17 oz each). Arrange on a baking tray and sprinkle with cheese and parsley. Bake for 20 mins, until golden and bubbling.
