Spring Vegetable Soup - cooking recipe

Ingredients
    4 tbsp olive oil
    2 None medium onions, thinly sliced
    1 head green cabbage, trimmed, thinly sliced
    3 None carrots, trimmed, thinly sliced
    3 None medium potatoes, peeled, sliced into strips
    3.5 oz button mushrooms
    3.5 oz shiitake mushrooms, sliced
    4 cups vegetable stock
    2-3 tbsp light soy sauce
    4 tbsp creme fraiche
    2 tbsp Asian chili sauce (such as Sambal Oelek)
Preparation
    Heat olive oil in a saucepan over medium heat. Sweat onions for 2-3 mins, until translucent. Add cabbage, carrots, potatoes and mushrooms. Saute for 3-4 mins, stirring. Add stock and simmer for 8-10 mins. Add soy sauce and season.
    Distribute soup between 4 serving bowls. Add 1 tbsp creme fraiche and some chili sauce to each bowl. Serve.
