Mini Meatloaves - cooking recipe

Ingredients
    1 lb ground lamb
    1/3 cup breadcrumbs
    1 None egg
    1 None onion, grated
    1 None small zucchini, grated
    1/4 cup pine nuts, toasted
    2 tbsp fresh parsley, chopped
    1 tbsp Worcestershire sauce
    2 tsp fresh thyme, chopped
    7 oz mozzarella cheese, 1/2 cut into 8 cubes, remaining grated
    1 cup tomato sauce
    None None baby arugula, to serve
Preparation
    Preheat oven to 400\u00b0F.
    Combine ground lamb, breadcrumbs, egg, onion, zucchini, pine nuts, parsley, Worcestershire sauce and thyme. Season to taste. Shape into 4 oval-shaped meatloaves. Press 2 cubes of cheese into the center of each meatloaf. Transfer to a baking dish and bake for 25-30 mins, until browned.
    Pour tomato sauce over top and sprinkle with grated cheese. Bake for another 5-10 mins, until cooked through and cheese has melted. Serve with arugula.
