Spicy Chicken And Couscous - cooking recipe

Ingredients
    2 tbsp olive oil
    8 None boneless skinless chicken thighs, cut into thirds
    1 large onion, sliced
    1 large red pepper, seeded and sliced
    2 None chorizo, halved, sliced
    1 None long red chili pepper, finely chopped
    2 tsp smoked paprika
    1/2 tsp ground cumin
    1/2 tsp ground coriander
    1/2 tsp cayenne pepper
    1 can (28 oz) whole tomatoes, coarsely chopped
    1 cup chicken stock
    None None Couscous, steamed green beans, plain yogurt, cilantro leaves, to serve
Preparation
    Preheat the oven to 325\u00b0F
    Heat 1 tbsp of the olive oil in large ovenproof skillet on high heat. Brown chicken in two batches. Transfer to a plate.
    Heat remaining 1 tbsp oil in same pan on medium-high heat. Saute onion and pepper for 4-5 mins, until tender. Add chorizo and chili pepper. Cook for 3-4 mins, until chorizo is crisp. Add spices, cook, stirring for 30 seconds, until fragrant. Add tomatoes and stock. Bring to a boil. Return chicken to skillet. Cover.
    Bake for 40-45 mins. Serve with couscous, steamed green beans, yogurt and cilantro leaves.
