Rich Herb And Mushroom Soup - cooking recipe

Ingredients
    1 tbsp butter
    1 lb mushrooms, sliced
    1 tbsp all-purpose flour
    2/3 cup dry white wine
    1 1/2 cups vegetable stock
    6 tbsp chopped fresh parsley
    6 tbsp chopped fresh basil
    1/4 cup snipped chives
    1 cup heavy cream
    None None Herbs and nasturtium flowers, to garnish
Preparation
    Heat the butter in a saucepan, add the mushrooms and saute for 4-5 mins, stirring. Season with salt and pepper.
    Set aside a quarter of the mushrooms and sprinkle the rest with flour. Saute for 1-2 mins. Deglaze the pan with wine then pour in the stock. Simmer for 5-6 mins.
    Stir the parsley, basil and chives into the soup then remove from the heat. Blend until smooth using a blender or food processor. Stir in the cream and place the soup back on the heat to gently warm. Season to taste. Divide the soup between 4 bowls and sprinkle with chopped herbs and nasturtium flowers.
