Baked Pink Grapefruit Sabayon - cooking recipe

3 None pink grapefruits, peeled, 2 juiced, 1 whole
3 None medium egg yolks
1/4 cup brown sugar
2 tbsp sweet white wine
5 tbsp butter
1/4 cup powdered sugar, plus extra for dusting

Preheat oven to 400\u00b0F. Heat the grapefruit juice in a saucepan over high heat until it is reduced to a third of its original volume. Using a sharp knife, slice into one segment of the whole grapefruit as close to the membrane as possible, then repeat on the other side of the segment. Continue until all the flesh has been removed from the fruit.
Meanwhile, place a bowl over a pan of hot water and beat the egg yolks and the brown sugar together with the white wine until the mixture is thick and creamy. In four separate oven-proof dishes, arrange the grapefruit segments in a star shape. Pour over the egg mixture, ensuring it is evenly distributed. Bake for 3-4 mins, until golden brown.
To make the sauce, heat the butter and the powdered sugar with the grapefruit juice and simmer for 1 minute. Take the baked grapefruit from the oven and sprinkle with powdered sugar. Serve with the sauce on the side.
