Decadent Chocolate Friands - cooking recipe

Ingredients
    1/2 cup cream
    10 oz dark chocolate, 1/3 grated, the rest chopped
    12 tbsp butter
    6 large egg whites, lightly whisked
    1 cup ground hazelnuts
    2 1/2 cups powdered sugar
    2/3 cup flour
    2 tbsp cocoa powder
Preparation
    For the ganache, heat cream in a small saucepan over medium heat, bring to a boil, then immediately add the grated chocolate and remove from heat. Let stand for 5 mins, then stir until smooth. Cover with plastic wrap and chill, stirring occasionally, for 30 mins or until thickened. Transfer to a small, resealable food storage bag. Chill until needed.
    Preheat oven to 375\u00b0F. Grease a 12-cup friand pan. Place butter and half the chopped chocolate in a medium saucepan over low heat. Heat and stir for 3 mins, until smooth, then cool. Combine with egg white and ground hazelnut in a large bowl. Sift in powdered sugar, flour and cocoa powder and stir to combine. Add the remaining chocolate and stir to combine. Spoon mixture into the prepared pan and bake for 20 mins or until a skewer comes out clean. Cool in pan for 5 mins, then transfer to a wire rack to cool completely.
    Snip a corner from the ganache bag and pipe a swirl of ganache onto each friand. Allow to set, then serve.
