Minted Rice Salad With Kebabs - cooking recipe

Ingredients
    1 lb package express brown rice
    1/2 cup currants
    1/2 cup sliced almonds, toasted
    2 tbsp shredded fresh mint, plus extra leaves, for garnish
    2 None green onions, sliced
    2 tbsp honey mustard dressing
    8 None ready-made lamb or chicken kebabs, cooked according to pack instructions
Preparation
    Prepare rice according to pack instructions. Transfer to a serving dish, separating grains with a fork. Set aside to cool.
    Meanwhile, pour 1/3 cup of boiling water over currants. Set aside for 5 mins to soften and drain well.
    Add currants to rice with almonds, mint, green onions and dressing and toss to combine. Top with kebabs. Garnish with mint leaves.
