Salmon Sandwiches With Pea Shoot Salad And Cilantro Yogurt - cooking recipe

Ingredients
    4 None 3 1/2-oz salmon fillets, skin removed and checked for pinbones
    2 tbsp green curry paste
    1 1/2 cups pea shoots
    3 None thinly sliced green onions
    1/4 cup roughly chopped mint leaves
    1/2 cup plain yogurt
    1/4 cup chopped cilantro leaves
    1/2 cup thawed frozen peas
    1 clove garlic, minced
    1 tbsp oil
    4 None soft sandwich rolls, split
Preparation
    Spread one side of each piece of salmon with curry paste Set aside 10 minutes.
    Meanwhile, toss together pea shoots, green onions, and mint. Season to taste and set aside.
    In a small bowl, combine yogurt, cilantro, peas, and garlic. Season to taste.
    Heat oil in a large skillet on medium. Cook salmon, seasoned-side down, 3-4 minutes. Turn and cook a further 1-2 minutes, until just cooked through. Transfer to a plate.
    Top the bottom half of each roll with a little salad, a piece of salmon, and yogurt sauce. Cover with tops of rolls. Serve with remaining salad.
