Roast Turkey With Orange Macadamia Stuffing - cooking recipe

Ingredients
    1 None whole turkey (9-10 lbs)
    4 tbsp (1/4 stick) butter, melted
    2 cups chicken stock
    None None FOR THE ORANGE MACADAMIA STUFFING
    2 tbsp unsalted butter
    1 large onion, finely chopped
    6 cups fresh white breadcrumbs
    1 None orange, peel grated
    3/4 cup orange juice
    1/2 cup mixed herbs, such as parsley, thyme and tarragon
    1/2 cup chopped macadamias
    1 None egg, lightly beaten
Preparation
    Preheat the oven to 350\u00b0F. For the orange macadamia stuffing, melt butter in a small skillet on medium heat. Cook onion for 5 mins, stirring, until soft. Transfer to a large bowl and add remaining ingredients. Season to taste and mix thoroughly. Add a small amount of milk or cream if stuffing doesn't hold together.
    Remove giblets from turkey. Pat turkey inside and out with paper towels. Spoon half of stuffing into body cavity.
    Spoon some of stuffing into neck end, without packing it too tightly. Bring neck flap over stuffing to back and secure with a small skewer. Place any remaining stuffing into cavity.
    Fold each wing back and underneath to secure. To truss, place turkey on its back and run string around wings and underneath to cross over back. Bring string up to tie legs together. Keep legs close to body.
    Place turkey on a rack in a roasting pan. Pour stock and 1/2 cup water into pan. Brush turkey with butter and season. Cover with foil, sealing around edges of pan. Roast turkey for 1 hour. Remove foil.
    Roast for another 1 3/4 hours, basting regularly with pan juices, until tender and golden brown. A meat thermometer inserted into thickest part of thigh should register 175\u00b0F. Remove turkey from oven. Let stand 20 mins.
