Pork With Mashed Potatoes And Garlic Pesto - cooking recipe

2 lbs russet potatoes, peeled and chopped
2 tbsp pine nuts
1/3 cup olive oil
3 heads garlic, cloves separated and peeled
1/3 cup grated Parmesan cheese
1/3 cup chopped fresh parsley
3/4 cup milk
2-3 tbsp butter
Pinch None ground nutmeg
2 tbsp vegetable oil
4 None boneless pork loin chops (1 inch thick)

Cook the potatoes in a large saucepan of boiling salted water for 15-20 mins until tender. Meanwhile, toast the pine nuts in a large dry skillet for 2-3 mins, stirring often. Remove to a bowl. Heat the olive oil in the same skillet over medium heat, add the garlic and cook for 8-10 mins, stirring often, until soft but not browned.
Add the garlic mixture to the pine nuts. Stir in the Parmesan and parsley and season with salt and pepper.
Drain the potatoes and return to the saucepan. Add the milk, butter and nutmeg, season with salt and pepper and mash until creamy. Cover to keep warm. Heat the vegetable oil in a large heavy skillet over medium-high heat. Add the pork chops and cook for 3-4 mins per side until just cooked through. Divide the mashed potatoes and pork among four plates. Spoon over the garlic pesto and serve.
