Lemony Fish With Buttered Vegetables - cooking recipe

3.5 oz rice crumbs
2 tsp lemon pepper seasoning
1 None egg
4 (5.25 oz) firm white fish fillets
1 cob corn
7 oz cauliflower, cut into florets
7 oz broccoli, cut into florets
5.25 oz frozen peas
1 1/2 tbsp butter
1/4 cup vegetable oil
None None lemon wedges, to serve
Preparation

Combine rice crumbs and seasoning mix. Whisk egg in a shallow bowl. Dip fish in egg then coat in rice crumb mixture. Cover and chill for 10 mins.
Meanwhile, steam vegetables until tender. Remove kernels from cob then combine vegetables in a large bowl. Add butter and toss until combined. Season. Cover with foil to keep warm.
Heat oil in a large frying pan over medium heat. Add fish and cook for 2-3 mins per side, or until fish is golden brown and cooked to your liking. Drain on paper towels.
Serve fish with vegetables and lemon wedges.
