Potato And Meatball Salad - cooking recipe

Ingredients
    1 3/4 lbs potatoes, peeled and cubed
    14 oz ground beef
    1 small onion, finely chopped
    6 tbsp breadcrumbs
    1/4 cup milk
    1 None egg
    2 tsp mustard
    2 tbsp canola or sunflower oil
    1 None leek, trimmed and sliced
    6 None radishes, sliced
    4 None baby corn, sliced
    1/4 cup salad dressing, such as Miracle Whip
    1/4 cup cider vinegar
    2 tbsp whole grain mustard
    1 tsp sugar
Preparation
    Cook the potatoes in boiling salted water for 12-15 mins until tender.
    Meanwhile, mix the ground beef, onion, breadcrumbs, milk, egg and mustard until well blended. Season. Shape the mixture into small meatballs using wet hands. Heat the oil in a large skillet on medium-high heat. Add the meatballs and fry for 6 mins, turning occasionally.
    Blanch the leek in a saucepan of boiling water for 2-3 mins then drain. Drain the potatoes. Gently toss the meatballs, potatoes, leeks, radish and baby corn in a large bowl.
    Mix the salad dressing, vinegar, mustard and sugar and season generously. Drizzle the salad with dressing.
