Broccoli, Cauliflower And Bacon Frittata - cooking recipe

Ingredients
    4 None potatoes, peeled and cut into 3/4-inch pieces
    14 oz cauliflower, cut into small florets
    8 oz broccoli, cut into small florets
    1 1/2 tbsp vegetable or olive oil
    4 slices bacon, chopped
    8 None eggs, at room temperature
    1/2 cup milk
    3/4 cup grated Cheddar cheese
Preparation
    Place potatoes and cauliflower in a large steamer basket over a saucepan of simmering water. Steam for 5 mins. Add broccoli. Steam for 8 mins, or until just tender. Drain well.
    Meanwhile, heat 1/2 tbsp of the oil in a large nonstick ovenproof skillet on high heat. Add bacon; cook and stir for 4 mins, or until well browned. Drain on paper towels. Wipe pan clean.
    Preheat the broiler to high. Whisk eggs and milk in a large bowl until just combined. Stir in bacon, 1/2 the cheese and the well-drained vegetables. Season. Heat remaining 1 tbsp oil in clean pan on high heat. Add egg mixture; sprinkle remaining cheese on top. Cook for 5 mins, or until bottom and sides are just set.
    Place frittata under broiler for 7 mins, or until just set. Carefully invert frittata onto a large serving plate. Serve.
