Steak With Potato Au Gratin And Green Beans - cooking recipe

2 tsp butter, plus extra to grease
1 lb potatoes, peeled and thinly sliced
1 cup heavy cream
5 tbsp milk
1 pinch grated nutmeg
1/4 cup Gouda, grated
10 oz green beans, trimmed
1 None green onion, trimmed and halved lengthwise
1 None onion, finely diced
1 tbsp sunflower oil
4 None small beef steaks

Preheat the oven to 400\u00b0F. Grease two small baking dishes with butter. Arrange the potatoes inside the dishes in layers.
Mix 1/2 cup cream, the milk and the nutmeg together and season. Pour over the potatoes then sprinkle with cheese. Bake for 30-45 mins, until the potatoes are tender.
Meanwhile, cook the beans in a saucepan of boiling, salted water for 2 mins, then add the spring onion and cook for a further 2-3 mins. Drain. Heat the butter in a saucepan then add the onion and saute for 3-4 mins. Add the beans to the pan and saute for 1-2 mins.
Heat the oil in a frying pan until its is hot. Sear the steaks for 2-3 mins on each side, or until cooked to your liking. Season then remove from the pan and keep warm. To make the sauce, deglaze the pan with 1/2 cup cream then bring to a boil and simmer for 1-2 mins. Season.
Wrap the beans in green onion to form bundles them place on 2 plates along with the steaks and potato gratin. Drizzle with sauce then serve.
