Bacon And Rice Cake - cooking recipe

Ingredients
    1 tbsp olive oil
    4 slices bacon, chopped
    1 None red onion, chopped
    2 cloves garlic, crushed
    1 tbsp chopped fresh sage
    1 tbsp honey
    3 cups cooked brown rice
    1 cup grated mozzarella cheese
    2 None eggs, lightly beaten
    None None Arugula leaves, to serve
Preparation
    Preheat the oven to 350\u00b0F. Lightly grease an 8-inch springform pan. Line bottom with parchment paper.
    Heat oil in a medium skillet on high heat. Cook bacon, onion and garlic for 3-4 mins, until lightly golden.
    Add sage and cook for 2 mins. Remove from heat; stir in honey. Combine rice, bacon mixture, mozzarella and eggs in a large bowl. Mix well and season to taste. Spoon mixture into prepared pan, pressing firmly.
    Bake for 25-30 mins, until golden and firm. Serve in wedges. Top with arugula.
