Buttermilk Panna Cotta With Summer Fruits - cooking recipe

4 cups buttermilk
1 tsp vanilla bean extract
1/4 cup dark agave syrup
1 None lemon, zested
2 tbsp powdered gelatin, bloomed in cold water for 5 mins
None None fresh exotic fruit salad, to serve
Preparation

Gently heat 3/4 cup buttermilk. Meanwhile, combine remaining buttermilk with vanilla extract, agave syrup and lemon zest. Gently melt bloomed gelatin in warmed buttermilk then whisk into flavored buttermilk. Distribute between 4 tea cups or serving glasses. Cover with plastic wrap and chill for 2-3 hours, or overnight.
Serve panna cotta with exotic fruit salad.
