Pork And Fennel Pasta - cooking recipe

Ingredients
    2 tbsp olive oil
    4 None pork sausages
    13 oz spaghetti
    1 bulb baby fennel, thinly sliced
    3 None shallots, sliced
    2 cloves garlic, minced
    1/2 cup white wine
    2 1/2 tbsp butter, chopped
    1 bunch broccolini, chopped
    None None shaved Parmesan cheese, to serve
    None None mixed greens, to serve
Preparation
    Heat 1 tbsp oil in a large frying pan over medium heat. Cook sausages for 8-10 mins, turning, until just cooked through. Let cool slightly. Slice thinly.
    Cook spaghetti in boiling salted water until al dente. Drain.
    Meanwhile, heat remaining oil. Saute sausage slices for 2-3 mins, until golden. Add fennel, shallots and garlic. Saute for 3-4 mins, until fennel is tender. Add wine and cook, stirring, for 1 min. Add butter and broccolini. Cook, stirring, for 1-2 mins, until broccolini is almost tender. Toss with pasta. Season.
    Serve topped with Parmesan and mixed greens on the side.
