Tabouli Fruit Salad Cups - cooking recipe
Ingredients

6 oz bulgur wheat
2.5 oz dried fruit, chopped
2 cups apple juice
1 tbsp grated fresh ginger
1/4 cup fresh mint leaves, coarsely chopped
4 None small oranges, halved, flesh scooped out and chopped
None None low-fat plain yogurt, to serve
Preparation

Place bulgur and dried fruit in separate heatproof bowls.
Bring apple juice and ginger to a boil. Pour 1/2 over bulgur and remainder over fruit. Let stand for 20 mins, or until most juice has been absorbed. Combine bulgur, reconstituted fruit, mint and chopped orange flesh. Spoon into orange cups.
Serve with yogurt.
