Smoked Chicken And Berry Salad With Strawberry Vinaigrette - cooking recipe

Ingredients
    2 bunches asparagus, trimmed
    1 lb smoked chicken breast, thinly sliced (or use roasted chicken breast)
    2 bunches arugula, trimmed
    8 oz strawberries, hulled and thinly sliced
    1 cup blueberries
    1/2 cup blackberries
    1/2 cup raspberries
    1/4 cup olive oil
    2 tbsp cider vinegar
    1 tsp grated orange peel
Preparation
    Spray a grill pan or grill grates with no stick cooking spray. Heat the grill pan on high heat or preheat the grill to medium-high. Grill the asparagus 4-5 mins, turning until just tender. Cool slightly.
    In a large bowl, combine asparagus, chicken, arugula, half the strawberries and the remaining berries.
    For the strawberry vinaigrette, place remaining strawberries with all dressing ingredients in a food processor or blender. Process until smooth.
    Drizzle a little dressing over salad just before serving. Serve with extra dressing on the side.
