Falafel With Couscous Tabouli - cooking recipe

Ingredients
    2 oz couscous
    2 tbsp lemon juice
    2 tsp lemon zest
    4 None Roma tomatoes, seeded, finely chopped
    1/3 cup fresh parsley, coarsely chopped
    1/4 cup fresh mint, coarsely chopped
    1 None small red onion, finely chopped
    12 None pre-made falafels
    None None pita bread, to serve
    None None hummus, to serve
Preparation
    Pour 1/4 cup boiling water over couscous. Add lemon juice and zest. Cover with plastic wrap and set aside for 5 mins. Fluff couscous with a fork then toss with tomatoes, herbs and onion. Season.
    Serve falafels over couscous with pita bread and hummus.
