Turkey Parmigiana - cooking recipe

Ingredients
    4 tbsp butter
    2 tbsp vegetable oil
    4 None breaded turkey breast cutlets
    10 oz jarred char-grilled peppers, drained, sliced
    1/2 cup tomato sauce
    3 oz mozzarella cheese, grated
    1.5 oz Parmesan cheese, grated
    None None salad greens, to serve
Preparation
    Preheat broiler. Lightly grease a large, shallow baking dish.
    Heat butter and oil in a large, deep frying pan over high heat. Cook turkey cutlets for 2-3 mins per side, until crisp and golden. Drain on paper towels.
    Arrange turkey in prepared baking dish. Top evenly with peppers, tomato sauce and cheese. Grill for 2-3 mins, until cheese melts and is golden. Serve with salad greens.
