Bacon, Feta And Tomato Crepes - cooking recipe
Ingredients

1 1/2 cups all-purpose flour
2 cup 2% or whole milk
6 None eggs
8 slices bacon, cut into thirds
2 tbsp oil
1 lb cherry tomatoes
6 None spring onions, sliced
1/2 lb feta cheese, crumbled
Preparation

Mix flour, milk, eggs and 1/2 tsp salt until smooth. Set aside for 20-30 mins. Place 1 slice of bacon in an 8 inch frying pan and render fat. Pour in 1/8 of the batter and cook on both sides until golden brown. Add a little oil when turning, if needed. Remove from pan and keep warm. Repeat 7 more times.
Heat oil in a pan and saute tomatoes for 3 mins, turning. Add spring onions and cook briefly. Season then top each crepe with tomatoes, spring onion and feta, fold over and arrange on a serving plate. Serve.
