Vegetarian Spinach Lasagna - cooking recipe

1 3/4 lb spinach, washed
2 tbsp olive oil, divided
2 None onions, peeled and finely chopped
2 cloves garlic, peeled and finely chopped
1 1/3 lb cream cheese
1 pinch white pepper
1 pinch ground nutmeg
1 tbsp tomato paste
2 tbsp finely chopped herbs (thyme, majoram)
1 lb canned chopped tomatoes
1/2 lb lasagna sheets
1 cup Parmesan, grated
None None basil leaves, to garnish
Preparation

Preheat oven to 375\u00b0F. Blanch spinach in boiling salted water for 2 mins. Drain thoroughly, and chop. Heat 1 tbsp oil and saute half the onions and garlic. Stir in cream cheese, then add spinach. Season with salt, pepper and nutmeg.
Heat 1 tbsp oil in a pan and saute remaining onion and garlic. Stir in 1 tbsp tomato paste and the herbs. Add chopped tomatoes, simmer for 10 mins, and season.
Grease a 11 X 7 baking dish and cover bottom with one quarter of lasagna sheets. Top with one third of creamed spinach. Continue layering lasagna and creamed spinach, then spread with the tomato sauce. Sprinkle with Parmesan and bake for 40-45 mins. Serve garnished with basil leaves.
