Spicy Stuffed Peppers - cooking recipe

Ingredients
    1 tbsp olive oil
    1 None onion, peeled and finely diced
    1 oz pistachios, coarsely chopped
    1 tsp curry powder
    1 lb sausage meat
    1 None egg
    2 tbsp breadcrumbs
    5 sprigs parsley, finely chopped, some reserved for garnish
    2 None red bell peppers, cut lengthwise and cored
    4 oz mozzarella, grated
    1/2 cup vegetable stock
Preparation
    Preheat oven to 350\u00b0F. Heat oil in a frying pan and saute onion for 2 mins. Add pistachios and curry powder and saute for 2 mins. Transfer to a bowl and let cool.
    Mix together sausage meat, egg, breadcrumbs, and parsley. Season. Place the peppers in a baking dish. Spoon the filling into the peppers, then sprinkle with mozzarella. Pour stock into the dish and bake in middle of oven for 35 mins.
    Garnish peppers with parsley and serve with farmhouse bread and herb butter (optional).
