Roast Beef With Rich Gravy - cooking recipe

Ingredients
    2 tsp olive oil
    1 (2 1/4 lb) piece beef sirloin
    2 None carrots, peeled, coarsely chopped
    4 None shallots, peeled, quartered
    2 stalks celery, trimmed, coarsely chopped
    2 tsp flour
    1 tbsp tomato paste
    2 cups beef stock
Preparation
    Preheat oven to 400\u00b0F.
    Heat oil in a large Dutch oven over high heat. Cook beef until browned all over. Transfer to oven and roast for about 45 mins, or until beef is cooked to your liking. Remove beef from pan and cover to keep warm.
    To make the gravy, place Dutch oven with pan juices over high heat. Add carrots, shallots and celery. Cook, stirring occasionally, for 10 mins, or until vegetables are browned. Add flour and cook, stirring, for 4 mins, or until mixture is dark brown. Add tomato paste, beef stock and 1 cup water. Bring to a boil. Boil for 10 mins, or until gravy thickens. Strain and discard vegetables.
    Slice beef and serve with gravy.
