Salmon Patties With Caper Mayonnaise - cooking recipe

Ingredients
    4 None potatoes, peeled and halved or quartered
    2 tbsp butter
    1/3 cup fresh breadcrumbs
    7 oz canned salmon, drained and flaked
    4 None chopped green onions
    1 None egg
    None None zest and juice of 1 lemon
    None None plain flour, for coating
    1/4 cup vegetable oil
    None None salad, to serve
    None None Caper Mayonnaise
    4 tbsp mayonnaise
    1 tbsp sour cream
    1 tbsp chopped capers
    None None small handful dill, chopped
Preparation
    Cook potatoes in a saucepan of boiling water, 15-20 minutes, until tender. Drain well.
    Mash with butter until almost smooth. Season to taste. Add breadcrumbs, salmon, green onions, egg, lemon zest and juice. Mix well. Allow to cool slightly.
    To make the caper mayonnaise, mix mayonnaise, sour cream, chopped capers and chopped dill, until combined.
    Shape the potato mixture into 8 oval patties. Roll in flour, shaking off excess. Heat vegetable oil in a large frying pan on high.
    Cook patties in batches, 5-6 minutes each, turning once, until golden and heated through. Drain on paper towels.
    Serve salmon patties with caper mayonnaise, accompanied by salad, if you like.
