Chocolate Coconut Cakes - cooking recipe

Ingredients
    4 None eggs, separated
    3/4 cup granulated sugar
    1 cup cornstarch
    2 tsp self-rising flour
    1/2 tsp baking powder
    1 tbsp unsalted butter
    2 cups powdered sugar
    1 3/4 cups shredded coconut
    2-3 drops pink food coloring
Preparation
    Preheat oven to 400\u00b0F. Grease and line an 8 inch baking pan with parchment paper. Whip egg whites until stiff. Gently fold in granulated sugar. Break up egg yolks and gently fold in. Sift cornstarch, flour and baking powder together and fold in. Transfer to prepared pan and bake for 20 mins. Chill for 30 mins then cut into small squares.
    Meanwhile, whisk together 3 tbsp hot water and butter. Add powdered sugar and thin with hot water, if necessary. Add food coloring. Sprinkle coconut onto a plate. Using 2 forks, carefully coat cakes in icing then roll each piece in coconut. Transfer to a wire rack and let set.
