Classic Fried Rice - cooking recipe
Ingredients

1/2 tbsp peanut oil
2 None large eggs, beaten
2 None ham steaks, chopped
1 tbsp fresh grated ginger
2 cloves garlic, crushed
1 lb frozen mixed vegetables (such as corn, peas, peppers, onions), thawed and drained
8 oz cold cooked long-grain rice
5.25 oz small shrimp, peeled
2 tbsp soy sauce
1 tbsp Chinese cooking wine
None None Scallions, thinly sliced, to serve
Preparation

Heat 2 tsp oil in large wok on high. Pour in egg and cook as an omelette. Remove, roll up and slice. Heat remaining oil in wok. Stir-fry ham, ginger and garlic for 1 min. Add vegetables. Stir-fry for 2 mins.
Add rice, shrimp, soy sauce and wine. Stir-fry for 2-3 mins, until hot. Serve topped with omelette and scallion.
