Orecchiette With Sausage In Red Pesto Sauce - cooking recipe

10 oz orecchiette pasta
3-4 oz salami, thinly sliced
9 oz cherry tomatoes, halved
3/4 cup sun-dried tomato pesto
1 bunch basil, chopped
Preparation

Cook the pasta according to package instructions in boiling salted water, drain and set aside. Fry the salami until crispy then remove for the pan.
Add the tomatoes to the pan and cook for about 5 minutes. Add a little of the pasta water together with the pesto and basil, leaving some for garnish, and cook for a few more minutes.
Add the pasta and salami, give it a good mix and serve with a sprinkling of chopped basil.
