Hoisin Turkey Summer Rolls - cooking recipe

Ingredients
    13 oz ground turkey
    1 None (1-inch) piece fresh ginger, peeled, grated
    1/3 cup hoisin sauce
    1/4 cup sweet chili sauce
    12 None (8-9-inch) rice paper rounds
    1 None cucumber, deseeded, cut into matchsticks
    1 cup bean sprouts
    2 1/2 oz snowpeas, siced
    12 None fresh mint leaves
    12 None fresh cilantro sprigs
Preparation
    Heat a large, oiled skillet, add turkey and ginger and cook, stirring, until turkey has changed color. Remove from heat. Stir in half the hoisin sauce and 1 tbsp sweet chili sauce.
    Dip a sheet of rice paper in a bowl of warm water until barely soft. Carefully lift from water, place on board covered with tea towel. Spread a heaped tablespoon of turkey mixture along center of sheet, then top with some cucumber, bean sprouts, snow peas, mint and cilantro. Roll rice paper over filling, fold in sides, then roll up to enclose filling. Repeat with remaining rice paper, turkey mixture, vegetables and herbs.
    Combine remaining sauces with 1 tbsp water in small bowl. Serve rolls with dipping sauce.
