Gingerbread Cookie Wreaths - cooking recipe

1/2 cup butter, chopped, at room temperature
1/2 cup brown sugar
1/2 cup honey
1 None egg yolk
1/2 cup all-purpose flour
1/2 tsp baking soda
1 tbsp ground ginger
1 tsp ground cinnamon
1/4 tsp ground cloves
1/2 cup powdered sugar
None None sprinkles, to decorate

Preheat oven to 350\u00b0F. Line 2 baking trays with parchment paper. Cream butter, brown sugar and honey. Add egg yolk and mix thoroughly. Add flour, baking soda and spices and mix until just combined. Turn out onto a floured surface and gently knead until smooth.
Roll out to 1/4 inch thick then cut 30 (3 inch) discs from dough. Cut a 3/4 inch disc from the center of each cookie. Transfer to prepared trays, evenly spread out, and bake for 12-15 mins, until golden. Let cool on trays.
To decorate, combine powdered sugar and enough water to form a firm, spreadable icing. Drizzle over cookies then decorate with sprinkles.
