Ingredients

1/2 lb dried apricots
2/3 cup grapefruit juice
3.5 oz whole blanched almonds, roasted
1/3 cup coconut
Preparation

Place the apricots in a bowl and add the grapefruit juice. Cover and leave to soak for 2 hrs.
Preheat the oven to 350\u00b0F. Line a 9 inch square cake pan with parchment paper. Place the toasted almonds in a food processor and process until finely ground. Add the soaked apricots and liquid and process to a paste. Stir in the coconut.
Place the mixture in the pan and smooth. Bake for 20-25 mins. Mark into 12 pieces (in the pan) then return to the oven for a another 8-10 mins. Leave to cool then remove from the pan and cut into bars. Store in an airtight container.
