Beef With Salsa Verde - cooking recipe

4 (7 oz) beef tenderloin medallions
1 tbsp finely chopped fresh flat-leaf parsley leaves
2 tbsp finely chopped fresh dill
2 tbsp finely chopped fresh chives
1 tbsp baby capers, rinsed, drained
1 clove garlic, minced
2 tbsp olive oil
1 tbsp lemon juice
2 tsp whole grain mustard
Preparation

Preheat grill and oil grates. Grill steaks until cooked to your liking. Cover and let rest for 5 mins.
Meanwhile, to make the salsa verde, combine remaining ingredients in a small bowl.
Serve steaks topped with salsa verde.
