Onion, Anchovy And Olive Pizzetta - cooking recipe

Ingredients
    1 tbsp olive oil
    3 None Spanish onions, thinly sliced
    2 tbsp dry sherry
    1 lb pizza dough
    2 tbsp tomato puree
    12 None drained anchovy fillets, coarsely chopped
    1.5 oz black olives, thinly sliced
    2 tbsp fresh oregano leaves
Preparation
    Preheat oven to 475\u00b0F. Grease 4 baking trays or pizza trays.
    Heat oil in a large frying pan. Cook onions, stirring, until lightly browned. Add sherry and cook, stirring, until evaporated. Set aside.
    Divide pizza dough into 4 portions. Roll each portion out into a 6 inch round. Place on trays and spread tomato puree over top. Arrange onion mixture, anchovies, olives and oregano on top. Bake for 15 mins, or until base is crisp.
