Vegan Strawberry Cheesecake - cooking recipe

Ingredients
    240 g cashew nuts
    120 g coconut oil
    100 g soft dried apricots, finely chopped
    200 g strawberries, chopped, plus extra to garnish
    2 tbsp agave syrup
Preparation
    Line the bottom of a 7 inch springform pan with parchment paper. Combine 3 tbsp coconut oil, ground cashews, apricots and 1 tsp water. Transfer to the prepared pan and press down firmly to form a crust. Chill for 30 mins.
    Place remaining cashews, strawberries, coconut oil, agave syrup and 3 tbsp water in a food processor and blend until smooth. Transfer to the prepared pan, smooth and chill for 2 hours. Remove from the pan and garnish with reserved cashews and strawberries.
